Although it’s the 27th, today is the day we celebrated Christmas with my parents, who came over for a gift exchange and a meal. For me, Christmas dinner means turkey, so that’s what I prepared.

An almost-15lb fresh (never frozen), free-range bird that spent just shy of 4 hours in a 300°F oven, stuffed with apples, Italian sausage, celery, mushrooms, onion, thyme, sage, and rye bread.
No brining, no deep-frying, nothing special. Just some quality time in the not-too-hot oven with the occasional baste. Came out juicy and tender, not even a hint of dryness in the white meat.
Served with mashed potatoes, green beans with butter and almonds, and gravy. Lots of gravy. According to my dad and Olivia: not enough gravy. Noted.
